Understanding technical factors is vital when using plant-based green colors

  • To produce green color shades, a concentrate of spirulina is mixed with a concentrate of yellow raw materials to deliver a spectrum from turquoise to lime green 
  • For optimal results, it is important to protect the spirulina from high temperatures and acid during the manufacturing process

Each application has its own technical considerations. For example, for starch, pectin, and gelatin gummies, the most vibrant blues are achieved when adding the color at temperatures below 97°C/207°F, with even deeper blues at temperatures under 90°C/194°F.
